Where do I change the custom model data number of certain items? And is there any plugin that would prevent duplicate custom model numbers from being made?

I have no idea what you mean.
ItemsAdder automatically handles that.. it won't generate duplicate custom model data for your models.
If you manually force duplicate custom model data you will get an error in console to warn you about it.
